摘　　要：目的了解齐齐哈尔市居民乳制品摄入量及其影响因素,并对乳制品中反式脂肪酸种类及含量进行检测,探讨人群反式脂肪酸摄入的风险评估。方法采用分层整群随机抽样的方法抽取齐齐哈尔市居民3 100人。采用SPSS 19.0软件进行统计分析,并用气相色谱法对顺式和反式脂肪酸甲酯进行定性、定量分析。结果所检测乳制品中反式脂肪酸含量,液态乳中为0.03 g/100 g,发酵乳中为0.03 g/100 g,乳粉中为0.06 g/100 g;居民平均每人每天通过液态乳摄入反式脂肪酸量为0.05 g,通过发酵乳摄入量为0.02 g,通过乳粉摄入量为0.015 g;结论性别、文化程度、家庭人均月收入均影响人群乳制品的摄入,居民每人每天通过乳制品摄入反式脂肪酸的健康风险较低。Objective Discussion residents dairy intake and the impact of intake factors; Qiqihar common market by three dairy brands of trans fatty acids in type and content of testing, and use of the population of dairy intake, people discuss trans fatty acids intake risk assessment. Methods Stratified cluster random sampling method to extract Qiqihar 3 100 investigation. Statistical analysis methods are used SPSS 19.0 software, and analyzed by GC method cis and trans fatty acid methyl esters qualitative and quantitative analysis of the influence of factors of population intake of dairy products the number and content of trans fatty acids contained in the daily intake of dairy products exposure risk assessment. Results Liquid milk trans fatty acid content of 0.03 g/100 g, fermented milk trans fatty acid content of 0.03 g/100 g, trans fatty acid content in milk powder was 0.06 g/100 g; an average daily intake of trans residents through a liquid milk the amount of fatty acids 0.05 g, by fermented milk intake of trans fatty acids 0.02 g, by milk intake of trans fatty acids 0.015 g. Conclusion Gender, education level, family income were affected population intake of dairy products, residents fed dairy products per person per day intake of trans fatty acids in health risk is low.
