摘  要:研究对国内鱼油的品质评价指标,主要包括感官、理化指标和重金属含量进行了系统测定和统计分析。分析检测的124个粗鱼油样品和46个精制鱼油样品中,90%的粗鱼油样品水分及挥发物含量为0-0.82%,酸值为0.3-28.6 mg/g,过氧化值为0.47-8.0 meq/kg,碘值大于150 g/100 g,不溶性杂质含量在0.5%以下,茴香胺值为7.3-68.4;90%的精制鱼油水分及挥发物含量为0.01%-0.17%,酸值为0.12-1.54 mg/g,过氧化值为0.29-2.8 meq/kg,碘值大于160 g/100 g,不溶性杂质含量低于0.1%,不皂化物含量为0.15%-1.39%,茴香胺值为5.25-19.55,所有精制鱼油样品总砷、铅和汞的含量分别为0-0.084、0-0.06 mg/kg和0-0.003 mg/kg。通过分析结果,并借鉴国内外标准,粗鱼油的水分及挥发物含量、酸值等指标,精制鱼油的酸值、过氧化值、碘值、不皂化物含量、茴香胺值和重金属等指标需要在后期标准的修订过程中进行调整和添加,以满足市场发展的需求。本研究检测分析了目前我国流通市场上原料鱼油的品质状况,并对后期市场监管标准的修订提出了合理化建议,对于保障我国鱼油市场的健康发展具有重要意义。The quality evaluation indexes of fish oil, mainly including the sensory and physicochemical indexes and the content of heavy metals, were analyzed in the present study. In the 124 crude fish oil samples and 46 refined fish oil samples, 90% of crude fish oil samples showed: moisture and volatile matter content: 0-0.82%, acid value: 0.3-28.6 mg/g, peroxide value: 0.47-8.0 meq/kg, iodine value: 〉 150 g/100 g, insoluble impurities content: 0.5%, anisidine value for 7.3%-68.4; 90% of refined fish oil showed: moisture and volatile matter content: 0.01%-0.17%, acid value: 0.12-1.54 mg/g, peroxide value: 0.29-2.8 meq/kg, iodine value: 〉160 g/100 g, insoluble impurity content: 〈0.1%, unsaponific- able matter: 0.15%-1.39%, anisidine value: 5.25-19.55. Total of refined fish oil As, Pb and Hg: 0- 0.084 mg/kg, 0-0.06 mg/kg and 0-0.003 mg/kg respectively. Through the results, combining with the domestic and international standards, moisture and volatile matter content, acid value, peroxide value, iodine value, unsaponifiable matter content, anisidine value and heavy metals indexes is required to be adjusted to meet with the market development in the revision process of the standards. In this study, detection and analysis of the current quality of the raw fish oil in the circulation market, and raised rationaliza-tion proposals for the revision of post market legulatory standards and regulations, Which makes great sense to ensure the healthy development of China's fish oil market.
