摘  要:【目的】优化酒石酸提取柑橘皮渣中水溶性膳食纤维的工艺.【方法】以柑橘皮渣为原料,水溶性膳食纤维得率为指标,在单因素试验基础上,采用正交试验设计法优化酒石酸提取柑橘皮渣中水溶性膳食纤维的工艺.【结果】酒石酸提取柑橘皮渣中水溶性膳食纤维最佳提取工艺为酒石酸质量分数3%,料液比1∶20(g∶mL),浸泡时间120min,加热回流时间120min.【结论】按优选工艺条件下水溶性膳食纤维得率为25.4%,验证试验证明结果稳定,具有生产应用价值.【Objective】To optimize the process for extraction of water-soluble dietary fiber from citrus peel residue with tartaric acid.【Method】Citrus residues was treated with tartaric acid to extract soluble dietary fiber(SDF)and the yield of soluble dietary fiber was used as an indicator and the orthogonal experiment was carried out to optimize the extraction process of soluble dietary fiber based on the single-factor experiments.【Result】The optimal extraction parameters were found as follows:mass fraction of tartaric acid was 3.38%,the ratio of material-to-liquid was 1∶20(g∶mL),soak time was 120 min and heating reflux time was 120 min.【Conclusion】Under the optimized conditions,the actual yield of soluble dietary fiber was 25.4% and it was verified to be stable with production value.
