摘 要:为了获取更加全面准确的朗德鹅鹅肥肝营养成分数据,对70只商品代朗德鹅进行了填饲试验,填饲1个月后(鹅龄115 d,填饲前体质量4.0-4.3 kg,填饲结束体质量6.0-6.4 kg)屠宰取肝,并对鹅肥肝进行了基本营养成分分析。测定结果显示,鹅肥肝的干物质含量为55.89%,粗蛋白含量为9.06%,粗脂肪含量为55.51%,粗灰分含量为0.70%,钙含量为0.01%,磷含量为0.10%;朗德鹅肥肝的各种必需氨基酸含量(色氨酸未测)均较高,与风味关系密切的谷氨酸为4.47%;朗德鹅肥肝的不饱和脂肪酸含量高达73.94%;脂肪性状:碘价91.77、酸价0.481 3、皂化价196.58。表明朗德鹅鹅肥肝具有较高的营养价值。In order to obtain the more comprehensive nutrition data of goose fat liver of Landes Goose with artificial feeding,70 product generation Landes Gooses are artificial feed,one month later(115 days old,the body weights are 4.0-4.3 kg before the artificial feed experiment and 6.0-6.4 kg after the artificial feed experiment). Goose Fat Liver are take off,and the nutrition analysis is carried out. The results show that,dry matter content in the goose fat liver is 55.89%,crude protein is9.06%,crude fat is 55.51%,crude ash is 0.70%,calcium 0.01%,phosphorus 0.10%;Contents of essential amino acid(Tryptophan is not detected) ias higher,content of glutamate which with closely relationship with flavor is 4.47%;contents of unsaturated fatty acid is 73.94%;fat traits:Iodine value 91.77,acid value 0.481 3,saponification value 196.58. The results indicated that,goose fat liver of Landes Goose with high nutrition level.
