摘 要:目的检测几种常见品牌桶装方便面中氯化钠含量,为消费者正确食用方便面提供参考。方法采用国家标准方法中直接沉淀滴定法对桶装方便面的面饼、粉包、酱包以及泡面汤中的氯化钠含量进行测定。结果测定的12种方便面中氯化钠含量最小的是品名9方便面,为(4.996±0.080)g,最大值的是品名3方便面,为(8.926±0.252)g。粉包中氯化钠总含量和百分含量均最高,约占方便面氯化钠总含量的一半,其次是酱包,面饼中氯化钠含量最少。泡面汤中氯化钠含量约为面条中氯化钠含量的2倍。结论方便面中氯化钠含量较高,一桶方便面中氯化钠含量达到或超过了每日钠盐的推荐摄入量。建议食用方便面时,消费者应根据个人情况酌情加入粉包,少喝或不喝汤,以防止摄入过多氯化钠从而影响人体健康。Objective To detect the content of sodium chloride from several market common brands of bucket instant noodles, and provide guidance of eating instant noodles healthily for consumers. Methods National standard method of direct precipitation titration was used for detecting content of sodium chloride for noodle cake, powder packets and sauce packets, and the sodium chloride from the soup of instant noodles were also determined. Results The minimal content of sodium chloride is the product sample 9 among 12 kinds of instant noodles (4. 996 ± 0. 080)g, the maxi- mum content is the product sample 3 (8.93± 0.25 ) g. The total content of sodium chloride and its percentages from powder packets were the highest, accounting for about half of the total content of sodium chloride from instant noodles, followed by sauce packets, and noodle cake. Content of sodium chloride from noodles soup was about two times as the noodles. Conclusion The content of sodium chloride from a bucket instant noodles is near or exceed the recommen- ded daily intake of sodium. When eating instant noodles, consumers should edible the powder packets appropriately based on individual circumstances, or drink less soup, in order to prevent damage to human health due to excessive in- take of sodium chloride.
