摘  要:目的了解鞍山市食品中食源性致病菌的污染状况,为食源性疾病监测和预警提供科学依据。方法按照《食源性致病菌监测工作手册》2013年对鞍山市采集的11类食品进行10种致病菌监测。结果 2013年共采集275份样品,检出致病菌50株,总检出率为18.18%。其中蜡样芽孢杆菌检出率最高,为42.22%;其次是阪崎肠杆菌,检出率为32.00%。检出率最高的食品是婴幼儿食品,检出率为23.00%;其次是水产品与乳及乳制品,检出率分别为12.50%和8.33%。结论鞍山市食品存在不同程度的食源性致病菌污染,食品安全监管部门应加强食品安全监督管理。Objective To investigate the contamination status of food-borne pathogens in food in Anshan City so as to provide scientific evidence for surveillance and early-warning of food-borne diseases. Methods We monitored 10 kinds of pathogenic bacteria from 11 categories of food collected in Anshan City according to the standard operation procedures in the handbook of National Surveillance on Food-borne Pathogenic Bacteria in 2013. Results A total of 275 samples were collected in 2013. 50 strains of pathogenic bacteria were detected, with the total detection rate of 18.18%. The detection rate of Bacillus cereus was the highest ( 42.22% ), followed by Enterobacter sakazakii ( 32.00% ). The detection rate of pathogenic bacteria in infant food was the highest (23.00%), followed by aquatic products( 12.50%) and milk and dairy products (8.33%). Conclusions There exist different degrees of food-borne pathogen contamination in food in Anshan City; and hence, food safety supervision department should strengthen the suoervision and management of food safety.
