摘　　要：本研究通过对总糖含量测定方法进行改良,排除了桑椹色素对滴定终点判断的干扰。用改良直接滴定法测定了桑椹酒中总糖含量为3.72 g/L,小于干红葡萄酒中4 g/L总糖含量的标准。改良后的测定方法简便快捷、准确稳定。The determination method of total sugar content in mulberry wine was improved through eliminating the interference of mulberry pigment on the final judgment. The content of total sugar in mulberry wine was determined as 3. 72 g/L by improved direct titration method,which was less than the standard of 4 g/L in dry red wine. The improved method was simple,rapid,accurate and stable.
