摘　　要：食品添加剂是高校食品营养与检测专业的核心课程之一。有较强的理论性、科学性、实践性和前沿性,有些知识学生较难掌握和理解,因此,在许多高校正在进行食品添加剂课程教学的改革。该文从几个方面对食品添加剂课程进行了教学探索,获得了一些经验,以供同行们提高教学质量借鉴和参考。＂Food additive＂ is one of the core courses of food nutrition and testing major education in colleges and uni-versities.Have strong theoretical,practical and advanced,students are difficult to grasp some knowledge,therefore,many colleges and universities are carrying out food additive curriculum teaching reform.This article from the follow-ing several aspects of ＂food additive＂,course teaching exploration,gained some experience,which is of reference tocolleagues,in order to improve the teaching quality.
