摘  要:分析大白菜-结球甘蓝单体异附加系AC5及其亲本大白菜85-1和结球甘蓝11-1中的营养成分,结果表明,AC5的粗纤维含量和VC含量分别为23.02%和425.08 mg/100 g,显著高于大白菜85-1(P<0.05)。有机酸含量为0.30%,显著高于结球甘蓝11-1(P<0.05);从AC5中共检测到8种硫苷,硫苷组分与85-1相同,主要硫苷组分为PRO和GBC,含量分别为1.41μmol/g和1.23μmol/g;AC5的必需氨基酸比例合理,优于85-1,符合FAO/WHO规定的蛋白模式。AC5的限制性氨基酸与其亲本相比,包括11-1的亮氨酸和赖氨酸以及85-1的甲硫氨酸+胱氨酸,结合了双亲的特点;AC5与85-1相比,含有较高的K元素和Mg元素,含量分别为2 065.87 mg/100g和201.59 mg/100 g,其它矿质元素含量二者相当。可见AC5较好地综合了双亲的营养品质。The main nutritional components of Chinese cabbage-cabbage monosomic alien addition line AC5 and its parents Chinese cabbage 85-1 and cabbage 11-1 were investigated in this paper. The results showed that the content of crude fiber and vitamin C was higher than that in 85-l(P〈0.05) with value of 23.02% and 425.08 mg/100g, respective- ly; the content of organic acid was 0.30%, which was higher than 11-1 (P〈0.05). Eight glucosinolates were found in AC5 and 85-1, the main glucosinolates of AC5 were PRO and GBC with content were 1.41μmol/g and 1.23 μmol/g, re- spectively. The essential amino acid ratio of AC5 is reasonable and has better the ratio than 85-1, which met the stan- dard of Food and Agriculture Organization of the United Nations/Word Health Organization (FAO/WHO). The limited amino acids of AC5 were Leu, Lys and Met+Cys, combining with the characteristics of the two parents. Compared with 85-1, AC5 contains high level of K and Mg with value of 2 065.87 mg/100 g and 201.59 rag/100 g, respectively, the oth- er mineral elements were similar to 85-1. In conclusion, this investigation indicated that ACs has combined the nutrition- al quality of two parents.
