摘  要:目的了解宝鸡市市售食品生物性污染状况水平和趋势,进行食品安全风险评估和预警,为制定有效的食品监管措施提供依据。方法根据《2015年陕西省食品安全风险监测食品微生物及其致病因子国家计划项目监测工作方案》的监测方法和检验方法,采集和检验食品样本。结果在监测的7类340份食品中,共分离出6种74株食源性致病菌,总检出率为17.35%。结论宝鸡市食品已经不同程度地受到多种食源性致病菌的污染,应加强市售食品监督管理,以减少可能引起食源性疾病的危险因素。Objective To know the microbial contamination level and trend of market food in Baoji,process food safety risk assessment and early warning,and provide evidence for effective regulatory measures of food. Methods Food samples were collected and tested according to the food safety risk monitoring and national project monitoring plan in Shaanxi province. Results Among the 7 kinds 340 samples of food in monitoring,a total of 6 kinds of 74 strains of foodborne pathogenic bacteria was isolated,the overall relevance ratio was 17. 35%. Conclusion Market food of Baoji city has been polluted by many foodborne pathogens in different extent. The supervision and management of food products should be strengthen in order to reduce the risk factors of foodborne illness.
