摘 要:通过测定粗多酚和儿茶素单体清除DPPH自由基、超氧阴离子自由基和羟基自由基的能力,研究茶多酚的体外抗氧化性。结果表明:粗多酚和儿茶素单体对DPPH自由基、超氧阴离子自由基和羟基自由基存在很强的清除作用,并且它的清除能力与浓度在一定范围内存在一定的量效关系。粗多酚的清除能力比Vc强;儿茶素单体的清除能力是Vc的(1.22~1.45)倍,其中EGCG的清除能力〉GCG的清除能力〉ECG的清除能力〉EGC的清除能力。To study the antioxidant activity of tea polyphenols in vitro by determinating crude polyphenols and catechins scavenging DPPH free radicals, superoxide anion radicals and hydroxyl radicals. The result showed that the DPPH radical, the superoxide anion free radical and hydroxyl free radical could be elimi- nated by crude tea potyphenols and caffeine. In a certain range, there was a certain effect relationship between the concentration and the scavenging ability. The scavenging activity of crude polyphenols was stronger than that of Vc. The scavenging ability of catechu monomer is (1.22-1.45) times stronger than Vco The older of scavenging ability were EGCG〉GCG〉ECG〉EGC.
