摘 要:该文介绍了传统白酒酿造设备的发展现状,系统地概述了物料混合拌料及输送机械化设备、蒸煮设备、冷却设备、糖化设备、生物发酵反应器等酿酒设备的工作原理和应用特点,阐述了酒精的净化设备、常用水处理设备、复合型多功能白酒处理机、过滤装置、自动酒降固处理机、酒老化设备等一系列酒后处理设备的用途和性能,指出了目前酿酒技术中所存在的问题,提出了将机器人技术、自动化技术和互联网技术应用于酿酒行业,提出了酿酒技术未来的研究方向及发展趋势。The development status of traditional Baijiu (liquor)-making equipments was mainly introduced. The working principle and application characteristics of Baijiu-making equipments including material mixing and conveying mechanical equipment, cooking equipment, cooling equipment, saccharification equipment, biological fermentation reactor were systematically summarized. The use and performance of a series of liquor post-pro- cessing equipments including alcohol purification equipment, commonly used water treatment equipment, multifunctional complex liquor processor, filtering device, automatic liquor solid-reducing processor, liquor aging equipment were expounded. The problems in the Baijiu-making technology were pointed out. Robot technology, automation technology and internet technology used in liquor-making industry was put forward, and the future research direction and development trend of Baijiu-making technology was put forward as well.
