摘　　要：TFA是食品安全中比较敏感且备受关注的话题。对TFA风险评估、TFA膳食暴露评估、红细胞膜TFA分析检测的研究进展进行综述,对中国TFA标准的制定和食品质量安全控制都有着积极的理论和现实意义。Trans - fatty acids （TFA） is sensitivity and high - profile topic in food safety. The risk assessment of TFA, assessment of TFA food exposure, and the summary of the progress of TFA food exposure assessment and red cell membrane TFA analysis and detection. All those have positive theory and practical significance to China TFA standard formulating and food quality and safety control.
