摘 要:近年来食品安全事件频发,严重挫伤了消费者对食品安全的信心。本文基于北京、长沙、成都3个城市实地调研的450个样本数据,借鉴国内外的消费者满意度模型,运用PLS—SEM方法以液态奶为例测算了我国食品安全消费者满意度。研究表明:消费者更加关注食品安全问题,对我国当前食品安全的现状担忧,认为最容易发生食品安全问题的环节是加工、存储及销售环节;消费者对食品安全的满意是被动选择,非主动接受;满意度指数在50左右,其上升空间很大。最后,本文提出加强与食品安全相关的法律法规建设及相关知识的普及,加大食品安全产业链各环节的监管力度及惩处力度等政策建议。In recent years, food safety affairs have make a huge negative impact on the confidence of consumers. The article based on surveys in Beijing, Changsha and Chengdu, investigated 450 consumers as research sample. While use conclusions inside and outside countries as reference, imply the mothed of PLS-SEM tests the level of satisfaction of milk production of food safety of consumer. The article forms the conclusion that, consumers are had a high concern of food safety affairs, and most of them are worried about the current situation of food safety. The consumers are considered that the stages which have highest probability to course food safety problem are process, storage and sells; the acceptance of food safety is passive; and the space to improve the satisfaction is still large. In the view of above, the article proposed the suggestions that we should enforce the construction of law system and relative knowledge; reinforce the power of regulation and punishment of every stage among food chain.
