摘  要:目的为了解宜宾市各类消费食物食源性致病菌污染水平,分析其原因及风险,为全市食品安全风险评估供应真实科学的依据。方法依据《宜宾市疾病预防控制中心食品安全风险监测实施方案》进行持续的食品检测。结果 2012-2015年统共检测543件食品样品,食源性致病菌共检出78株,总阳性率为(14.36%),在9种项目中,以蜡样芽胞杆菌的检出率(37.50%)为最高,其次是阪崎肠杆菌5.71%。在14类食品中,以流动早餐污染率最高(67.86%),其次为乳制品(42.86%)。结论宜宾市的部分食物存在一定的食源性致病菌污染。卫生监督部门应增食品管理,控制食源性疾病发生危害。Objective To understand the pollution status and related risk factors of foodborne in Yibin and provide a scientific evidence for food - borne disease monitoring. Methods The food - borne pathogens were detected based on the handbook of Implementation Plan of Food Safety Risk Monitoring. Results A total of 543 samples were detected from 2012 to 2015 with overall detection rate of 14.36%, and 78 strains of pathogens were deter- mined. The detection rate of bacillus cereus (37.50%) was the highest and enterobacter sakazakii (5.71%) was the second one. The dectetion rate of flowing breakfast stall (67.86%) was the highest among the 14 types of detected samples, and dairy products (42. 86% ) was the second one. Conclusion The food pollution of foodborne pathogens is existed in Yibin, which suggests the government should take more food monitoring and management to prevent the occurrence of foodborne diseases.
