摘　　要：[目的]了解杭州市2015年餐饮食品安全现状及公众对餐饮服务食品安全的满意度情况,为政府部门加强餐饮食品安全监管工作、改善餐饮食品安全现状提供建议。[方法]采用多阶段分层随机抽样方法,在杭州市所有15个县(区)抽取街道和被访公众开展问卷调查。采用描述性分析、单因素卡方检验和Logistic回归分析方法,分析餐饮服务食品安全公众满意度现状。[结果]共收回有效问卷4855份,杭州市餐饮服务食品安全公众满意度得分为68.62分,满意度条目得分最高的是公众对餐饮服务单位信息公示的满意度评价,满意度均值为3.64分(满分5分);得分最低的是对政府相关部门打击违法行为的评价,均值为3.23分。男性、在本地居住5年以上、低文化程度、从事服务性工作、低收入的公众对餐饮服务食品安全满意度最高。[结论]公众对餐饮食品安全满意度处于一般和比较满意之间,满意度状况良好,公众对政府食品安全信息宣传工作比较满意,政府打击餐饮食品安全违法行为力度需要继续加强。性别、文化程度、收入因素与餐饮食品安全满意度呈负相关关系,居住时间与公众餐饮食品安全满意度呈正相关关系。Objective To understand the situation of catering service food safety and public satisfaction in 2015 in Hangzhou,so as to provide suggestion for government strengthening food safety supervision work and improving food safety status. Methods Used multistage stratified random sampling method,selected streets interviewers from 15 counties（ districts） by questionnaire survey. It used descriptive analysis,single factor chi-square test and logistics regression analysis method. It analyzed the situation of public satisfaction degree of catering service food safety. Results It took back 4855 valid questionnaires. The score of Hangzhou catering services food safety public satisfaction was 37. 74（ full mark was 55）. The highest satisfaction item was public information,mean value was 3. 64,the lowest score of the evaluation was that relevant government departments crack down on illegal behavior,mean value was 3. 23. Male who lived local more than 5 years,low education,service work,low-income had highest satisfaction to catering services food safety. Conclusions Public satisfaction is between common and satisfaction catering services food safety. Satisfaction is in good condition. The public satisfy with government food safety information propaganda work. The force of government hit catering food safety illegal act should be strengthened. Gender,education,income factors are negatively related with food safety satisfaction. Residence time is positively correlated with public food safety satisfaction relationship.
