摘　　要：苦叶菜是福建省闽南地区一道地道、风味菜肴。近年来,其栽培面积逐年上升,成为当地农民增收的主要方式。本文采用高效液相色谱法对野生苦叶菜和驯化苦叶菜中氨基酸含量进行了测定和比较分析。结果表明:苦叶菜中氨基酸含量丰富、种类齐全,氨基酸含量配比合理,野生苦叶菜中氨基酸含量高于种植驯化的苦叶菜。In recent years ,Patrinia scabiosaefolia is a native cuisine in the southern region of Fujian Province, its cultivated area has increased year by year.Therefore, its cultivation has become the main way to increase the income of local farmers.The contents of amino acids of both wild and domesticated Patrinia scabiosaefolia were tested and analyzed by HPLC.The results showed that amino acids were richer in wild Patrinia scabiosaefolia than those in domesticated one ; both Patrinia scabiosaefolia had a complete range and reasonable content ratio of amino acids.
