摘 要:鳕鱼营养丰富,深受消费者喜爱,但国内外有关鳕鱼产品标签错误标示的报道较多。为了解目前鳕鱼产品标签标示情况,对46批次常见类型鳕鱼产品的进行检测。使用SN/T 3589.7—2013对鳕鱼DNA成分检测,发现在10批次冰鲜鳕鱼产品中无法检出。使用最新DNA条形码技术鉴定,结果显示均为细鳞壮鳕,该种鱼类属于鳕形目。鳕鱼为鳕形目鱼类,因此此次检测的所有产品的标签标示均符合要求。该次研究发现了标准方法存在的不足,并自行设计了可用于细鳞壮鳕DNA成分检测的实时荧光PCR法。最终构建的检测体系特异性好,可检测低至0.1%的掺伪量。且在10批次样品中均可检出细鳞壮鳕DNA成分。此次研究对鳕鱼产品属性进行鉴别,同时发现了标准方法的不足,并针对此问题建立了细鳞壮鳕DNA成分检测方法,可作为标准方法的补充,为监管部门提供技术支持。Cod fish is rich in nutrition and popular to the consumers. However, there are many reports of cod fish products mislabeling. In order to know the mislabeling rate, 46 cod fish products have been detected in this research. Cod DNA ingredient is detected by using real-time PCR method according to SN/T 3589.7--2013. The result shows that 10 cod fish products are unablely detected. By using the latest technology which is DNA barcoding, the real property of the 10 products is able to reveal. The results shows that all 10 products are made by Albatrossia pectoralis, which is belong to the order Gadiformes in biological classification. Cod generally refers to fish of the family Gadidae and to related species within the order Gadiformes. So, in this research, all 46 products meet the requirement of labeling. At the meantime, constmcte a method to detect Albatrossia pectoralis DNA ingredient base on real-time PCR method, consider the lack of standard method. The detection method can detect as low as 0.1% adulteration, and it can detect Albatrossia pectoralis DNA ingredient from the 10 products. In this research, 46 cod fish products are detected and able to find the lack of standard method. An Albatrossia pectoralis DNA ingredient detection method is constructed successfully, which can be supplement to standard method, and provide technical support to the supervision department.
