摘 要:β-伴大豆球蛋白是7S球蛋白的主要成分,是重要的大豆抗原蛋白。在单因素试验的基础上对超高静压处理压强、处理时间、β-伴大豆球蛋白质量浓度3个因素进行研究,以β-伴大豆球蛋白抗原抑制率为响应值,采用响应面法优化β-伴大豆球蛋白超高静压处理条件。结果表明:β-伴大豆球蛋白超高静压处理最佳条件为压强455 MPa、时间18 min、蛋白质量浓度15 mg/m L,在此条件下β-伴大豆球蛋白抗原性抑制率为49.59%。验证试验测得此条件下β-伴大豆球蛋白抗原抑制率为51.19%,标准偏差为1.07%,说明利用响应面法分析结果可靠。β-conglycinin is the major component of the globulin, and is an important soybean antigen protein. The present study was to investigate the optimal high hydrostatic pressure treatment parameters for reducing Antigenicity of β-conglycinin by response surface methodology. Based on the single-factor experiments, the effects of HHP treatment pressure, HHP treatment time and β-conglycinin concentration on the antigenicity of β-conglycinin were studied. The results showed that the optimal high hydrostatic pressure parameters process conditions were as follows:HHP treatment pressure of 455 MPa, HHP treatment time of 18 min and β-conglycinin concentration of 15 mg/mL. Under these conditions, the predicted and observed antigenicity inhibition rates of β-conglycinin were 49.59% and 51.19%, respectively. The standard deviation was 1.07%, which implied that the optimal conditions of HHP treatment obtained by response surface methodology was reliable.
