摘 要:从采自云南红河的31份烟草样品中分离筛选到5株可降解β-胡萝卜素的真菌,结合菌株形态及ITS序列分析对菌株进行分类鉴定。初步鉴定菌株YNCA9801为产黄青霉(Penicillium chrysogenum),YNCA9802为黄柄曲霉(Aspergillus flavipes),YNCA9803为枝孢霉(Cladosporium lignicola),YNCA9804为米曲霉(Aspergillus oryzae),YNCA9807为橘青霉(Penicillium citrinum)。菌株YNCA9804降解β-胡萝卜素可获得具果香味的发酵产物,样品通过GC-MS分析,发酵产物含有2-庚醇、2-壬酮和二氢猕猴桃内酯的致香物质。Five fungi strains which could degrade β--carotene were isolated and screened from thirty-one samples of tobacco collected from Yunnan Honghe. Those five strains were classified and identified with morphology of strain and ITS sequence analysis. The preliminary identification showed that the strain YNCA9801 was Penicillium chrysogenum, the strain YNCA9802 was Aspergillus flavipes, the strain YNCA9803 was Cladosporium lignicola, the strain YNCA9804 was Aspergillus oryzae and the strain YNCA9807 was Penicilliurn citrinum. The fermenting product with fruit fragrance was obtained by the degradation of β--carotene with the strain YNCA9804. The samples were detected by GC-MS analysis, it showed that fermentation products contained aroma compounds of 2-Heptanol, 2-Nonanone and Dihydroactinidiolide.
