食堂食品和餐具卫生状况分析:以深圳职业技术学院为例

摘　　要：针对深圳职业技术学院4个校区8间食堂的食品和餐具定期随机抽样进行常规微生物检测,分析检测结果,评价学校食堂卫生状况,为制定完善卫生监督制度和进一步提高管理水平提供科学依据.检测食品采用GB4789-2010方法;餐具采用GB 14934-94.数据统计从2013年6月至2016年6月,共抽检样品2398个,其中食品988个,餐具1410个.检测结果显示,食品合格率为99.4%;餐具合格率为99.0%.这说明食堂管理比较严格,食品安全工作做得比较到位,食品卫生状况良好.A random sampling of microorganism test on food and tableware is carried out regularly at 8 canteens on 4 campuses of Shenzhen Polytechnic. The test result will be used to evaluate the school canteen hygiene and can provide scientific evidence to further improve the sanitation management. GB4789-2010 is applied to test food and GB 14934-94, to test tableware. From June, 2013 to June 2016, 2398 samples （988 food samples and 1410 tableware samples respectively） were taken. Of these samples tested, 99.4% food samples and 99% tableware samples meet the hygiene requirement. This test shows that under a strict management control system, the school canteen can guarantee the food safety.
