摘 要:为给林下栽培平菇资源的综合利用提供参考依据,采用Box-Behnken响应面法优化了以超声辅助酶法提取富硒平菇柄多糖的工艺条件,并测定了多糖硒含量。结果表明,最佳提取条件为:复合酶液(纤维素酶∶果胶酶=2∶3)用量为2.5倍样品量,酶解温度47℃,超声提取时间46 min。在此工艺条件下,富硒平菇柄多糖的提取得率为14.53%,其硒含量为10.12μg/g。验证实验结果表明,此提取工艺简单可行,且按此工艺条件制得的富硒平菇柄多糖中有机硒的含量丰富,具有较高营养价值。In order to provide some references for comprehensive utilization of Pleurotus ostreatus resources planted in forest, the ultrasound assisted enzymatic extraction conditions of polysaccharides from selenium enriched P. ostreatus were optimized by using Box-Behnken response surface methodology. The selenium content in polysaccharide was also determined. The results showed that the optimal extraction conditions were as follows: the amount of composite enzymes (cellulase " pectinase = 2 : 3) was as 2.5 times as the sample, enzymolysis temperature was 47 ℃, ultrasonic time was 46 rain. Under the conditions, the extraction rate of polysaccharides was 14.53%, and selenium content was 10.12 μg/g. The results of verification test showed that the conditions were simple and feasible, selenium enriched P ostreatus had rich selenium content in stern and had higher nutrient value.
