摘 要:为探讨麦角硫因处理对双孢蘑菇的保鲜效果,考察4℃下不同浓度(0.03,0.06,0.12 mmol/L)外源麦角硫因处理双孢蘑菇,对其褐变和主要品质的影响。试验结果表明:0.12 mmol/L麦角硫因处理双孢蘑菇的硬度和VC含量分别比对照组高3.5%和17.0%,而丙二醛(MDA)含量和褐变度比对照组低2.9%和20.8%,麦角硫因处理显著降低了多酚氧化酶(PPO)活性和细胞膜渗透率,维持了膜系统结构和功能的完整,具有减缓褐变和延长贮藏时间的作用。外源麦角硫因处理对采后双孢蘑菇贮藏保鲜具有应用前景。In order to determine the effectiveness of egrothioneine on the preservation of Agaricus bisporus. The effects of exogenous ergothioneine solution treatments in different concentrations (0.03, 0.06 and 0.12 mmol/L) on browning and main quality of postharvest Agaricus bisporus under 4 ℃ were investigated. The results were as follows: The firumess and content of ascorbic acid of ergothioneine treatment (0.12 mmol/L) were higher than control by 3.5% and 17.0%, respectively. In addition, the percentage of membrane lipid peroxidation (MDA) and browning degree of ergothioneine treatment reduced 2.9% and 20.8%, respectively, compared with control group. Ergotbioneine treatment significantly reduced PPO activity and membrane permeability, as a result, it maintained a better structure and function of membrane system, delayed browning and extended the storage time. Overall, exogenous ergothioneine treatment has potential application foreground on the preservation of Agaricus bisporus.
