摘 要:采用常规测定方法对海蛇水解动物蛋白粉的质控参数进行分析研究,采用液质联用仪法对海蛇水解动物蛋白粉的氨基酸成分分析研究。结果表明,海蛇水解动物蛋白粉中水分4.35%,水解度22.52%,蛋白含量73.5%。氨基酸种类17种,其中必需氨基酸含量为33.35%。作为一种水解动物蛋白粉,具有较高的食用和营养价值。The quality control parameter in sea snake protein powder was analyzed with routine methods and analysis of amino acid composition of the sea snake protein powder with HPLC-MS/MS methods. The results showed that the contents of moisture, hydrolysis degree and protein in sea snake protein powder were 4.35%, 22.52% and 73.5%. The composition of amino acids in sea snake protein powder was found to contain 17 common amino acids, and the content of essential amino acids was 33.35%. As a hydrolyzed protein powder, it had good edibility value and nutritive value.
