摘  要:目的了解广州市市售食品中食源性致病菌的污染状况,为食源性疾病的监测和预警提供科学依据。方法2015年-2016年对广州市6类共计2 044份食品样品,依据《广州市食品安全风险监测工作手册》的要求,进行金黄色葡萄球菌、单核细胞增生李斯特菌、沙门菌、副溶血性弧菌、蜡样芽胞杆菌5种致病菌的检测和分析。结果在2 044份样品中检出致病菌241株,总检出率为11.79%。水产品致病菌检出率为59.10%,生鲜肉为7.28%,焙烤食品为7.24%,即食食品为5.83%,快餐或小摊食品为5.29%,熟肉制品为4.32%。副溶血性弧菌检出率高达56.36%,其次为蜡样芽胞杆菌(3.68%)、金黄色葡萄球菌(1.56%)、单核细胞增生李斯特菌(1.13%)、沙门菌(0.49%)。结论广州市食品存在食源性致病菌污染,应有针对性地加强食品监督管理,以减少可能引起食源性疾病的因素。Objective To investigate the food contamination caused by foodbome pathogens in Guangzhou, so as to provide sci- entific basis for developing food safety measures. Methods 2 044 samples in 6 kinds were collected from 2015 to 2016 in Guangzhou. According to Manual of Guangzhou Food Safety Risk Surveillance, samples were tested for the contamination with 5 kinds of foodborne pathogens, including Staphylococctts aureus , Listeria monocytogenes , Salmonella, Vibrio parahaemolyticus and Bacillus cereus. Results Among 2 044 samples, 241 strains of bacterial pathogens were detected, with the overall deteclion rate of 11.79%, in aquatic food(59.10% ), raw meat(7.28% ), baked goods (7.24%), ready - to - serve tbod (5.83%), fast food(5.29% ), cooked meat products(4.32% ). The detection rate was found in Vibrio parahaemolyticu^s( 56. 36% ), Ba- cillus cereus ( 3.68 % ) , Staphylococcus aureus ( 1.56 % ) , Listeria monocytogenes ( 1.13 % ) and Sahnonella (0. 49 % ). Conclusion Contamination of foodborne pathogen is existent in Guangzhou. Therefore, food safety risk monitoring shouht be strength- ened to decrease the occurrence of foodborne infectious disease.
