摘  要:目的了解湛江市出口虾中微生物污染状况,并为该类产品监管提供参考依据。方法采用GB 4789系列微生物检验方法,检测待出口虾中菌落总数、大肠菌群、大肠埃希菌、金黄色葡萄球菌、沙门菌、单核细胞增生李斯特菌、副溶血性弧菌及霍乱弧菌,并结合相应的限量标准对检验结果进行分析。结果共检验8 406份虾产品,菌落总数超标率为0.66%;大肠菌群超标率为1.44%;未检出大肠埃希菌;金黄色葡萄球菌、沙门菌、单核细胞增生李斯特菌、副溶血性弧菌和霍乱弧菌的检出率分别为0.29%、0.11%、0.43%、3.28%和2.00%。结论湛江市出口虾中存在不同程度的微生物污染,致病性弧菌的污染尤为严重,应该引起重视。Objective To realize the status of microbial contamination in shrimp for export in Zhangjiang and provide basis for product supervision. Methods The national food safety standards of GB/T 4789 were used to detect the total numbers of colony,coliforms,Escherichia coli,Staphylococcus aureus,Salmonella,Listeria monocytogenes,Vibrio parahaemolyticus and Vibrio cholerae,and the detection results were compared with the microbial limit standards. Results 8 406 samples were detected,and the total numbers of colony accounted for 0. 66%; coliforms accounted for 1. 44%; Escherichia coli was not detected; the detection rates of Staphylococcus aureus,Salmonella,Listeria monocytogenes,Vibrio parahaemolyticus and Vibrio cholerae were0. 29%,0. 11%,0. 43%,3. 28% and 2. 00%. Conclusion There was different degrees of microbial contamination in export shrimp in Zhanjiang,especially the contamination of pathogenic Vibrio,which should arouse people's attention.
