天然食品添加剂清除自由基作用的研究进展

摘　　要：自由基作为细胞新陈代谢过程中的自然产物,能调节许多生命过程,但在外界刺激下会诱发异常自由基反应,破坏自由基反应动态平衡从而引发疾病。食品添加剂是现代食品工业中的重要组成部分,天然食品添加剂无毒副作用,具有优越的抗氧化及清除自由基能力,在食品、医药等行业具有广阔的应用前景。综述了多种天然食品添加剂对活性氧自由基、活性氮自由基及其它自由基的清除作用,为从分子水平上进一步了解其保健功效、筛选健康安全的天然食品添加剂提供了新思路。As natural products in cell metabolic process, free radicals can adjust many life process. However, due to external stimuli can induce abnormal free radical reactions, the dynamic balance of free radical reaction will be broken,which may cause disease. Food additive is an important part in food industry,and natural food additive has non-side effects, excellent anti-oxidation capacity and free radical scavenging capacity, which has broad application prospects in food and pharmaceutical industries. We review the scavenging effects of many kinds of natural food additives on active oxygen free radical, active nitrogen free radical, and other free radicals. It can provide a new notion about understanding healthy function and screening a healthy and safety natural food additive at molecular level.
