摘 要:目的了解2012-2016年陕西省市售婴幼儿食品中蜡样芽胞杆菌的污染情况。方法在陕西10个地市的便利店,超市等流通环节采集婴幼儿食品,按照国家食品污染和有害因素风险监测工作手册方法进行蜡样芽胞杆菌的监测分析。结果 845份婴幼儿食品样本中检出蜡样芽胞杆菌阳性样品共132份,总检出率为15.62%,污染量在10 cfu/g^3 600 cfu/g。婴幼儿配方粉和婴幼儿即食谷类辅助食品中蜡样芽胞杆菌的检出率分别为17.18%和10.73%。计数结果>100 cfu/g的样品有12份,均为婴幼儿配方粉。各年份中2015年检出率最高,为50.00%,釆自不同流通环节的样品蜡样芽胞杆菌检出率的差异有统计学意义(χ~2=11.63,P=0.017)。不同产地的样品蜡样芽胞杆菌检出率的差异有统计学意义(χ~2=41.19,P=0.008)。结论陕西省市售婴幼儿食品中存在蜡样芽胞杆菌的污染,具有一定的安全隐患,相关监管部门应予以重视加强对婴幼儿食品中蜡样芽胞杆菌的监管,预防食源性疾病的发生。Objective To study the contamination of Bacillus cereus in commercial infant food from 2012 to 2016 in Shanxi Province. Methods To detect and analyze B. cereus in commercial infant food from supermarkets and convenience stores in ten cities of Shanxi Province according to the methods from manual for national food contamination and harmful factors in risk monitoring work. Results Among the 845 samples of commercial infant food, 132 copies were B. cereus positive, with a level in the range of 10 CFU/g-3600 CFU/g, and a total positive rate of 15.62% and 17.18% of the powder formula for infants and young children and 10.73% of the ready-to-eat cereal-based complementary foods for infants and young children were contaminated with Bacillus cereus. 12 samples had colony counts〉100 CFU/g, and all were the powder formula for infants and young children. The detection rate in 2015 was 50.00%, which was the highest. There was a significant difference in detection rate of different circulation stages (χ2 = 11.63, P=0.017)and samples from different regions (χ2 =41.19, P=0.008). Conclusion Bacillus cereus contamination of in commercial infant foods presented risks in food safety. Supervision of Bacillus cereus in infant food should be strengthened to prevent of the corresponding food borne diseases.
