摘 要:在特香型白酒机械化酿造生产中,通过收集和分析一年来机械化晾糟设备的使用数据及其对应的糟醅入池温度,研究糟醅摊晾过程中晾糟机的转速及其影响因素。结果表明,室温对晾糟机转速的影响具有统计学意义,利用回归分析方法发现幂函数能较好地体现晾糟机转速与室温之间的关系。In the mechanized production process of Texiang Baijiu, by collecting and analyzing the use data of the cooling equipment and corresponding pit-entry temperature of fermented grains in this year, we studied the rotating speed of the cooling equipment and its influencing factors in the fermented grains cooling process. The results suggested that, the effects of room temperature on the rotat- ing speed of the cooling equipment was statistically significant, and power function could reflect the relationship between room tem- perature and the rotating speed of the cooling equipment through regression analysis.
