摘　　要："食品工程原理"是食品专业学生的重要专业基础课程。通过充分运用多媒体课件、综合利用多种教学方式、理论与实践相结合、完善管理考核制度及利用师生互动等方法,激发学生学习"食品工程原理"课程的兴趣,实现良好的教学效果。Food Engineering Principles is an important professional course for food professional students. This paper explores the advantages of using the multi-media courseware,the comprehensive utilization of a variety of teaching methods,the combination of theory and practice,improve the management assessment system and the use of teacher-student interaction and other methods to stimulate students to learn Food Engineering Principle interest,to achieve good teaching effect.
