摘  要:目的分析沈阳市居民膳食结构的数据,了解沈阳市居民膳食结构的变迁,为指导居民合理膳食,改善营养提供科学依据。方法调查采用分层多阶段整群随机抽样的方法抽取样本,选取2006~2015年沈阳市4个区2岁以上的居民作为研究对象,调查在同一人群中重复进行。食物消耗情况采用连续3d24h个人膳食回顾法和家庭食物称重法,进行膳食结构分析。结果 2006~2015年,调查1 171人,男性占48.25%,女性占51.75%。居民能量的主要来源是谷类食物,居民膳食中谷类食物提供能量的比例呈下降趋势(P<0.01),动物性提供能量的比例呈逐渐上升趋势(P<0.01)。脂肪供能比呈上升趋势(P<0.05),碳水化合物供能比呈下降趋势(P<0.05)。动物性食物提供蛋白质的比例呈上升趋势(P<0.05)。居民膳食中脂肪的食物来源以精炼油为主,动物性食物提供的脂肪的比例增加(P<0.05),植物性食物提供脂肪的比例下降(P<0.01)。结论 2006~2015年沈阳市的居民膳食结构总体变化趋势呈现谷类食物摄入量减少,动物性食物摄入量增加,提供的优质蛋白质增加,脂肪供能比增加,逐渐由低脂膳食向高脂膳食转变的趋势。Objective To understand the changes of dietary structure among residents in Shenyang city through the anal- ysis on dietary structure, so as to provide scientific basis for improving their nutrition conditions. Methods Using the 2006-2015 China health and nutrition survey project data,Shenyang city residents over 2 years old were selected as the re- search objects,investigation was repeated in the same population. Food consumption by continuous 3 d 24 h personal dieta- ry review method and family food weighing method to analyze the dietary structure changing trends. Results During 2006-2015,a total of 1 171 persons were investigated, males accounted for 48.25 %, females accounted for 51.75 %. The main sources of energy for residents were cereals,the proportion of energy provided by cereals decreased ( P 〈0.01) ,ani- mal providing energy proportion increased gradually ( P 〈0.01). The fat ratio was rising ( P 〈0.05) ,carbohydrate ratio declined ( P 〈0.05). The animal food providing protein increased ( P 〈0.05). Fat dietary source of food mainly was re- fined oil, fat percentage provided by animal food increased( P 〈0.05) , that provided by plant food decreased( P〈0.01 ). Conclusion During 2006-2015, the dietary structure among residents in Shenyang city presents an overall changing trend: cereal intake decreases, animal food intake increases, fat ratio increases, and shift from low fat diet to high fat diet gradually.
