摘  要:梅花鹿鹿角含有丰富的胶质、氨基酸、无机元素等营养成分,在美容和保健等方面有较高的利用价值,但鹿角骨质严重,具有腥臭味,无法直接食用。试验采用复凝聚法制备梅花鹿鹿角微胶囊,以羧甲基壳聚糖和氯化钙为壁材,以梅花鹿鹿角、海藻酸钠、蔗糖酯和三聚磷酸钠为芯材,研究不同因素对微胶囊产率的影响。以产率为评定指标,响应面法优化最佳制备工艺条件。结果表明:梅花鹿鹿角微胶囊的优化条件为梅花鹿鹿角浓度66.00 g/L、羧甲基壳聚糖浓度3.00 g/L、氯化钙浓度4.00 g/L和海藻酸钠浓度5.00 g/L、蔗糖脂肪酸酯2.00 g/L和三聚磷酸钠2.00g/L。在此条件下进行验证试验,梅花鹿鹿角微胶囊产率值为84.32%。There are plenty of colloid,amino acid and inorganic elements in the antler of sika deer,and it has high value in the fields of beauty and health care.But the antler of sika deer is inedible,which has serious bone sclerosis and fishy taste.The microcapsules of sika deer antle were prepared from the carboxymethyl chitosan and calcium chloride as wall materials,and sika deer antle,sodium alginate,sucrose ester and sodium tripolyphosphate as core materials by the method of complex coacervation.The effects of the sika deer antle,carboxymethyl chitosan,calcium chloride and sodium alginate concentration on the yeild rate of microcapsules were investigated.Quadratic rotary combinational design was applied to optimize the preparation process on the microcapsules of sika deer antle.The results showed that the optimized conditions were the sika deer antle of 66.00 g/L,the carboxymethyl chitosan concentration of 3.00 g/L,the calcium chloride concentration of 4.00 g/L,the sodium alginate concentration of 5.00 g/L,the sucrose ester concentration of 2.00 g/L and the sodium tripolyphosphate concentration of 2.00 g/L.The encapsulation yield was 84.32%.
