摘 要:目的对重庆市不同地区野生食用菌中总砷及砷形态进行分析,为其食用的安全性提供参考依据。方法总砷采用微波消解-电感耦合等离子质谱法(ICP/MS)测定;不同形态砷经1%硝酸浸提,离子色谱-电感耦合等离子质谱法(IC-ICP/MS)测定。结果所测野生食用菌中总砷含量为34.6μg/kg^3.89×104μg/kg(以干重计),无机砷含量为38.1μg/kg^1.18×104μg/kg(以干重计),无机砷为总砷的(35.5%±27.7%),总砷含量高于500μg/kg的3种野生食用菌中砷以有机砷形式为主,而在测定的4种有机砷中松茸和松树菌中砷甜菜碱(As B)占总砷的50%以上,牛肝菌中二甲基砷(DMA)占总砷的(39.3%±25.3%)。结论野生食用菌中总砷、无机砷的含量随地域变化而改变。已研究的3种野生食用菌中无机砷、有机砷形态的分布亦随种类而不同,砷在野生食用菌中总体上以有机砷的形式存在,而在有机砷中以砷甜菜碱(As B)存在为主。Objective The analyzed the total arsenic and arsenic species content in wild edible fungus in different areas of Chongqing City, aiming to provide a reference for the safety of the edible fungus. Methods Total arsenic was detected by microwave digestion-ICP/MS, different species of arsenic were extracted with 1% nitric acid and determined by IC-ICP/MS. Results The total arsenic content in wild edible fungus was 34.6 μg/kg-3.89×104p, g/kg (based on dry weight), the content of inorganic arsenic was 38.1μg/kg-1.18×104μg/kg, the content of inorganic arsenic was (35.5±27.7) % of total arsenic content. In three kinds of wild edible fungus with the total arsenic content higher than 500μg/kg, organic arsenic was the main form. Among the four kinds of organic arsenic, arsenobetaine (AsB) in tricholoma matsutake and lactarius deliciosus accounted for more than 50% of total arsenic, and dimethylarsine (DMA) in bolete accounted for (39.3±25.3) % of total arsenic. Conclusion The total arsenic and inorganic arsenic content in wild edible fungus change with the geographical changes. The distributions of inorganic arsenic and organic arsenic forms in three kinds of wild edible fungus studied also vary with species difference. In general, arsenic exists in wild edible fungus in the form of organic arsenic, while arsenobetaine (AsB) is the main arsenic type existing in organic arsenic.
