PHYSICOCHEMICAL PROPERTIES AND FATTY ACID COMPOSITIONS OF PINE NUT OILS WITH DIFFERENT VARIETIES

摘  要:分析测定了3种不同品种松籽油(落叶松松籽油、马尾松松籽油、红松松籽油)的黏度、折光指数、不皂化物等主要理化指标,采用气相色谱法测定了松籽油的脂肪酸组成。结果表明,3种松籽油不饱和脂肪酸含量均在92.0%以上,其中亚油酸含量最高,相对含量为43.3%~44.2%,其次为油酸,相对含量为24.7%~28.7%,松油酸相对含量为12.5%~18.2%。松籽油中甘三酯含量较高的是LOL(13.39%~15.78%)、OLO(7.72%~10.38%)和OLPi(10.22%~13.00%);高效液相色谱法测定了松籽油的生育酚含量,落叶松松籽油中总生育酚含量为21.22 mg/100 g,马尾松松籽油中总生育酚含量为30.94 mg/100 g,红松松籽油中总生育酚含量为22.15 mg/100 g。The physicochemical properties of pine nut oils including viscosity,refractive index and unsaponi fication were examined in this study. The pine nut oil samples were sourced from three varieties of pine nut,which were larch pine nut,masson pine nut and Korean pine nut. The fatty acid compositions of the three oils were also analyzed by gas chromatography method. The results showed that the unsaturated fatty acid contents of three kinds of oils were all above 92.0%,and the fatty acid which had the highest contents in the three oils was linoleic acid with the relative contents of 43.3% ~ 44.2%,followed by oleic acid with the relative contents of24.7%~ 28.7%. The contents of pinolenic acid of the three oils were in the range of 12.5% ~18.2%. Moreover,the main triacylglycerols in the pine nut oils were LOL(13.39%~15.78%),OLO(7.72%~10.38%) and OLPi(10.22%~13.00%). The tocopherols contents in larch nut oil,masson pine nut oil and Korean pine nut oil were21.22 mg/100 g,30.94 mg/100 g and 22.15 mg/100 g,respectively. This work might be available for the application of pine nut oil in food industry.
