摘  要:牛肉以其高蛋白、多矿物质、味道鲜美等特点而备受大众喜爱。从牛肉的营养特点和开发价值着手,综述了目前牛肉的消费情况、四川省肉牛养殖、牛肉加工技术等方面现状,结合在牛肉生产和加工中所存在的问题,提出了相关建议。The protein content of beef was high, mineral was rich and the taste was delicious, and it was favored by the mass. The nutrition characteristics and development value were commenced, the consumption situation of beef at present, the beef cattle breeding in Sichuan province, the processing technology of beef and other present situation were reviewed, and combined with the existing problems in the production and processing of beef, and the related suggestions were put forward.
