摘 要:在超临界CO_2状态下通过二次酶解低温脱脂米糠制备米糠粉,以酶解米糠粉得率为指标,先用植酸酶酶解低温脱脂米糠,一次酶解产物的得率为48.2%。经灭酶后再加入质量比为1∶1的碱性蛋白酶和α-淀粉酶酶解一次酶解后的脱脂米糠,在酶添加量4.0%,酶解时间60 min,pH为8.0,酶解温度55℃时,米糠粉得率为79.0%,二次酶解时间缩短了10 min。酶解米糠粉得率较常规酶法生产米糠粉得率提高了14.0%左右,米糠粉在4.26 s内全部溶解。Rice bran powder was prepared by twice enzymolysis of low temperature defatted rice bran at the su- percritical Carbon Dioxide state. The yield of enzymatic hydrolysis of rice bran was used as an index, low temperature defatted rice bran was first hydrolyzed with phytase, the yield of the primary enzymatic hydrolyzate was 48.2%. After enzymatic inactivation, the defatted rice bran of the first Enzymatic hydrolysis was enzymatically digested with alkaline protease and α - amylase with a enzyme activity ratio of 1 : 1, the yield of rice bran powder was 79.0% when the enzyme dosage was 4.0% , enzymolysis time was 60 min, pH was 8.0 and hydrolysis temperature was 55 ℃. The time of secondary enzymolysis was shortened by 10 rain. The yield of enzymatic hydrolysis of rice bran powder was about 14.0% higher than that of conventional enzymatic method;rice bran powder was completely dissolved in 4.26 s.
