摘 要:[目的]鉴定评价柳州地方茶树群体种试制绿茶的品质,为柳州地方茶叶特色产品开发及资源利用提供参考。[方法]以福鼎大白和桂绿1号为对照品种,对柳州地方茶树群体种试制的绿茶的品质进行感官评定,并对其主要的生化成分进行测定和显著性差异分析。[结果]柳州地方群体种所制绿茶的感官品质综合评分高于福鼎大白和桂绿1号,且表现出栗香明显、鲜爽度高的品质特征。柳州地方群体种所制绿茶具有高水浸出物(42.72%)、高氨基酸(4.27%)、茶多酚含量适中(23.50%)的生化特点,其中氨基酸含量显著高于2个对照品种。与2个对照品种相比,柳州地方群体种所制绿茶的儿茶素类表现出较高含量的D,L-C和ECG,较低含量的EGCG的分布特征。18种氨基酸组分分析显示,柳州地方群体种所制绿茶的茶氨酸含量(1.786 9%)及其占氨基酸总量的比例(41.90%)特别突出,均显著高于2个对照品种,且其他组分中有7种氨基酸的含量均以地方群体种居高。[结论]柳州地方群体种所制绿茶的综合品质优于引进种植于当地的福鼎大白和桂绿1号,具有很大的开发潜力。[ Objective]To evaluate the quality of trial-processing green tea using landraces resources in Liuzhou,which can provide references for developing featured tea products and taking advantage of resources in Liuzhou. [ Method ] Sensory quality of trial-processing green tea using land- races resources in Liuzhou were evaluated in contrast to Fudingdabai and Guilv No. 1. And the chemical components of trial-processing green tea of these 3 experimental varieties were determined and analyzed by significance. [Result] The total scores of sensory quality of green tea using landraces resources of Liuzhou were higher than Fudingdabai and Guilv No. 1,which showed quality characteristics of obvious chestnut aroma and high briskness. Green tea using landraces resources of Liuzhou showed characteristics of high contents of water extract (42. 72% ) , amino acids (4.27% ) and moderate content of tea polyphenols (23.50% ).Then its content of amino acids were significantly higher than the 2 kinds of CK varieties. In contrast to the 2 kinds of CK varieties, catechins of green tea using landraces resources in Liuzhou showed characteristics of higher contents of D, L-C and ECG, lower content of EGCG. Analysis of 18 kinds of amino acids ingredients showed that, contents of theanine (1.786 9% ) and its ratio of amino acids (41. 90% ) were very significant,which were both significantly higher than the 2 kinds of CK varieties. And contents of the other 7 kinds of amino acids were higher in landraces resources. [ Conclusion] The integrated quality of trial-processing green tea using landraces resources in Liuzhou was superior to Fudingdabai and Guilv No. 1 that introduced from other fields,which would have great po-tential for development.
