摘 要:超高压加工技术是非热杀菌技术的一种,在牛乳加工中的应用研究是当前热点。本文概述了非热加工技术的概念、发展和特点,特别针对超高压加工技术在牛乳加工中对微生物、乳蛋白和乳脂肪等成分的影响进行了阐述,并简要分析超高压杀菌设备及其在乳品工业的应用现状。超高压杀菌技术在牛乳加工中具有一定的理论依据和实践经验,值得深入研究和商业化推广应用,本文还展望了超高压技术在乳制品工业中的制约因素和应用前景。Ultra high pressure technology is one of the non-thermal sterilization technologies, and the application research in milk processing is a current hot topic. This article summarized the concept, development and characteristics of non-thermal technologies, especially the influence of high pressure technology on microbes, and the composition such as milk protein and milk fat in the milk processing. It also briefly analyzed the present situation of high pressure processing equipment and its application in dairy industry. The ultra high pressure technology has a certain theoretical basis and practical experience in the process of dairy processing, which is worth further research and commercialization application. The restricting factors and application foreground of high pressure technology in dairy industry were also prospected.
