摘  要:红曲能够降低血压与血脂,这与其发酵产物洛伐他汀有关,而红曲霉固体发酵产洛伐他汀产量较低,因此有必要探究洛伐他汀高产的最适条件.本实验从固体角度出发,以大米为培养基质,首先比较东北大米、湖北香米、糯米三种大米对洛伐他汀产量的影响,选出最佳培养基质,然后分析碳源、氮源、无机盐、接种量以及发酵时间5个因素对洛伐他汀产量的影响,并挑选出碳源、氮源、无机盐进行正交试验设计,最终得出最适培养基为:以湖北香米为培养基质,可溶性淀粉3%、硝酸钠2%、磷酸二氢钾0.2%,最适发酵条件为:接种量2m L/100m L发酵液、发酵时间8d.本研究对红曲霉固体发酵高产洛伐他汀具有指导意义.The research have proved that Monascus strains can reduce blood pressure and blood lipids which is related to its fermentation products( lovastatin). However lovastatin yield by solid fermentation from Monascus strain is not high,so it is necessary to improve lovastatin yield by seeking the suitable solid cultural conditions. In the study,the effects of different rice on lovastatin yield was investegate for obtaining the optimum culture medium. The effects of carbon source,nitrogen source,inorganic salt,inoculation quantity and fermentation time on the production of lovastatin by solid fermentation of Monascus strain was studied. The optimum medium are as follows: Hubei rice as culture medium,soluble starch of 3%,sodium nitrate of 2% and monopotassium phosphate of0. 2%. The optimum fermentation conditions are as follows: inoculation quantity of 2 ml/100 ml cultural broth and cultureal time of 8 days. The results can provid a directive significance for enhancing the lovastatin yield by solid fermentation from Monascus strain.
