摘 要:为探究辐照技术对草鱼货架期及品质的影响,以新鲜草鱼为原料,在不同剂量^(60)Co-γ射线辐照处理下,研究4℃条件下草鱼贮藏品质的变化,以菌落总数、挥发性盐基氮(TVB-N)含量、色差值、pH值、鲜度值(K值)为指标,并配合汁液流失率及感官评价来综合评定生鲜草鱼肉鲜度变化情况。结果表明,在0、3、6和9 k Gy辐照剂量下,辐照剂量越高,生鲜草鱼肉的菌落总数、TVB-N含量及K值随着贮藏时间的延长其增长趋势越缓慢,pH值均表现为先下降后上升,而色差值受辐照剂量影响较小;9 kGy辐照剂量对草鱼肌肉品质有一定影响,表现为草鱼肌肉色差值和汁液流失率较低剂量升高,伴随着感官评分有不同程度下降。当辐照剂量为6 kGy时,生鲜草鱼肉贮藏效果最好,低温(4℃)冷藏可延长保质期至30 d。本研究延长了草鱼的货架期,并最大限度地保持了其鲜度和品质,为草鱼的冷藏保鲜提供了新思路。To explore the effects of irradiation technology on the shelf life and storage quality of grass carp,fresh fillets stored at 4℃ were irradiated by ^60Co-γ ray with different dosages( 0,3,6 and 9 kGy). The total number of colonies,volatile basic nitrogen( TVB-N),chromaticity values,pH value and K value were investigated to systematically assess the quality indexes of grass carp fillets,accompanied with loss rate and sensory evaluation of fresh juice. The results showed that pH value increased at first,and then decreased during storage. The growth rate of total number of colonies,TVB-N and K values decreased as the increase of the irradiation dosage. Meanwhile,the irradiation dose had little impact on the chromaticity values. In contrast with relative lower irradiation doses 9 kGy had an effect on the quality of grass carp grass carp fillets,which led to the chromaticity values and drip loss increasing,accompanied with sensory scores decrease in different degree. The study indicated that 6 kGy irradiation was the best choice for fresh-keeping of grass carp fillets after comprehensive evaluation,which could extend the shelf life of grass carp fillets to 30 d stored at 4℃.
