摘 要:目的分析2012—2017年白银市市售食品中化学污染物及有害因素的监测数据,及时发现食品安全隐患并分析危害因素的分布。方法按照《白银市食品安全风险监测工作方案》,在白银市所辖5个县(区)的各类超市、农贸市场及路边摊位抽取样品,参照国家食品安全风险监测工作手册的相关检测方法检测分析。结果共监测食品样品851份,合格808份、总体合格率94.95%,餐饮店检出的不合格率最高(7.50%),其次是农贸市场(6.62%)、学校周边(5.00%)、商店(4.35%)和超市(2.82%);常规监测食品样品812份,合格率94.70%,地方特色食品39份、合格率为100.00%;不合格样品和项目主要为蔬菜、熟肉制品、谷物及制品中的农药残留、金属、亚硝酸盐及含铝食品添加剂等。结论白银市食品安全总体情况良好,但仍存在安全隐患,应引起重视。Objective To analyze the surveillance results of chemical pollutants and harmful factors in the market food in Baiyin from 2012 to 2017, find out the potential food safety hazard, and analyze the distribution of risk factors. Methods Based on Food Safety Risk Monitoring Program in Baiyin, samples were selected randomly from supermarkets, farmer's markets and roadside stalls around five counties(district) in Baiyin city, detected by referring to the national food safety risk monitoring manual. Results All 851 food samples were surveyed with 808 samples qualified and total qualified rate of 94.95%.The unqualified rate was the highest(7.50%) of dining room, then farmer's markets(6.62%), stores around schools(5.00%),stores(4.35%) and supermarkets(2.82%). There were 812 samples collected for routine monitoring with qualified rate of94.70% and 39 special local food samples with qualified rate of 100.00%. The unqualified indices of the unqualified food samples were pesticide residue, metal, nitrite and food additives containing aluminium etc. in vegetables, meat products, cereal and products. Conclusions The food safety situation is generally good, but the risk still exits and should be paid attention to.
