摘 要:采用行为学和生化指标研究圆鮀鲣暗色肉蛋白酶解物(DMPH)的抗疲劳作用,并且与暗色肉粗酶解物(DMH)进行比较,初步推测其中主要的抗疲劳活性物质。结果表明,DMPH中粗蛋白含量显著高于DMH(p<0.05),DMPH的氨基酸总浓度高于DMH。DMH和DMPH均能显著延长小鼠力竭游泳时间和减少小鼠肝糖原的消耗(p<0.05),能显著降低小鼠血浆乳酸和尿素氮含量(p<0.05),而且还可显著提高小鼠体内抗氧化酶的活力(p<0.05)。DMH和DMPH均具有抗疲劳作用且无显著性差异(p>0.05),而且DMPH中粗蛋白和氨基酸含量高于DMH,初步推断暗色肉中蛋白质水解产生的多肽和氨基酸是酶解物中主要的抗疲劳活性物质。The behavioral and biochemical indexes were used to study the anti-fatigue effect of Auxis tapeinosom dark muscle protein hydrolysates( DMPH) and were compared with that of dark muscle hydrolysates( DMH) to preliminarily speculated the main anti-fatigue active substance in DMH. The result showed that the content of crude protein in DMPH was significantly higher than DMH( P<0.05) and the total acid concentration was higher than DMH. DMH and DMPH could significantly increase the swimming time of mice and reduce consumption of liver glycogen( P<0.05). They could significantly reduce the content of plasma lactic acid and urea nitrogen in mice and improve the activity of antioxidant enzymes in mice( P<0.05).Both of them had anti-fatigue effect and had no significant differences( P<0.05),and the content of crude protein and total amino acid concentration in DMPH were higher than those of DMH.It could be speculated that amino acids and peptide hydrolysates from dark muscle protein would be the main anti-fatigue active substances in DMH.
