摘 要:多糖是甘薯重要组分之一,甘薯多糖主要包括淀粉、膳食纤维、果胶、活性多糖等,不同多糖由于其结构、组分、理化特性等不同而具有不同的生物学功能.综述了甘薯多糖的抗氧化、抗肿瘤、抗炎症、抗糖尿病、抗微生物、抗肥胖、护肝和抗衰老等功能.深入研究甘薯多糖的功能及机制,可为提高甘薯附加值及甘薯多糖在医疗保健开发中的应用提供一定参考.Polysaccharide is an important component of sweetpotato. Sweetpotato polysaccharides mainly include starch, dietary fiber, pectin, active polysaccharides, etc. Different polysaccharides have different biological functions because of their different structures, compositions and physicochemical properties. In this review, it is discussed that the polysaccharides of sweetpotato contribute to various health benefits, such as anti-oxidative, antitumor, anti-inflammatory, anti-diabetic, anti-microbial, anti-obesity, hepatoprotective and anti-aging effects etc. Therefore, indepth study of the function and mechanism of sweetpotato polysaccharides can provide some reference for improving the additional value of sweetpotato and the application of sweetpotato polysaccharides in health care development.
