摘 要:目的了解四川省雅安市大学生膳食营养状况,为提高大学生营养水平提供理论依据。方法分层整群随机抽取雅安市2所高校一至三年级学生655人,采用24 h膳食回顾记录表和营养与健康认知KAP问卷进行调查。结果大学生摄入水果和蛋类偏低,摄入蔬菜、水产品和奶及奶制品不足,摄入油和盐偏高,摄入钠严重偏高,摄入维生素B1、硒和男生摄入锌不足。调查学生有98人偏瘦,其中女生80人,占81.63%。男生比女生花费更多时间运动,差异有统计学意义(t=-2.238,P<0.05)。营养专业学生的各营养知识正确率普遍高于非营养专业学生,差异具有统计学意义(P<0.05),且营养专业学生的早餐行为较好,每日摄入不重复的食物种数超过12种和每日食物类型以动植物均等的人数均比非营养专业学生多。结论雅安市大学生膳食结构有待改善,部分营养物摄入不均衡。建议学校向学生普及膳食营养知识及加强健康营养教育,提倡大学生饮食多样化。Objective To study the dietary status of college students,and to provide theory evidence of nutrition improvement for students. Methods A total of 655 college students from two universities in Ya'an were selected by the method of random cluster sampling and investigated by 24 hour review dietary record and KAP questionnaire. Results The intakes of fruits,eggs,vegetables,aquatic products and milk were lower than the recommended amount; while oil and salt were higher than the recommended amount. Some nutrients such as Vitamin B1, selenium and zinc were lower than Chinese DRIs, while sodium were much higher than Chinese DRIs. 98 students were underweight, which girls accounting for 81.63%. Compared to girls,boys spent more time on sports(t=-2.238, P〈0.05). The correct rate of nutrition knowledge in nutrition major students was higher than that of other majors' students(P〈0.05), and the breakfast behavior, number of food intakes, food types in nutrition major students were also better than those of other majors' students. Conclusion Dietary pattern of college students needs to be improved. Colleges should pay more attention to popularizing nutrition knowledge and advocating students to have a varied diet.
