摘 要:目的:了解扬州市盐水鹅重金属污染现状,对重点危害因子进行风险评估。方法:对扬州市盐水鹅进行抽样,采用电感耦合等离子质谱法(ICP-MS)检测样本中铅(Pb)、镉(Cd)、汞(Hg)、砷(As)的含量,根据检测结果及问卷调查结果,运用基于蒙特卡罗分析法的@Risk进行风险评估。结果:高频率摄入者在95百分位下Hg的暴露值占PTWI值的0.5%,As的暴露值占PTWI值的2.7%,可以看出食用盐水鹅对Hg和As的暴露量贡献率较低,且样本中Pb和Cd的含量均未超标。结论:食用盐水鹅对重金属的暴露量贡献量是较低的,安全风险较低。Objective:To understand the status of heavy metals pollution in salted goose in Yangzhou city and the risk assessment of key hazard factors.Methods:The samples of salted goose detected by the method of ICP-MS are analyzed the heavy metals such as Pb,Cd,Hg,As.According to the test results and questionnaire survey results,use the risk assessment method@Risk based on Monte Carlo analysis to study the ecological risk of heavy metals.Results:For the high-frequency intake people,the exposure value of the Hg is 0.5% of PTWI,and that of the As is 2.7% of PTWI.And the content of Pb and Cd in the samples does not exceed the standard.Conclusion:The heavy metal content in the human body through the intake of salted goose is lower,and the risk of safety is lower.
