摘 要:目的对2017年北京市市售6大类罐头食品中的Fe,Mn,Cu,Zn,Pb,Cd,Ni,Cr,V,Mo,As,Hg,Al和Sn 14种元素进行测定分析,了解北京市市售罐头食品的安全现状,为食品安全监管提供依据。方法采用高压罐硝酸消解,电感耦合等离子体质谱法(ICP-MS)对北京市场上的6大类罐头食品中的14种元素进行多元素分析。结果被检测的47件罐头食品,6种有限量标准的元素含量均低于国家标准。但水产罐头中砷和铝含量较其他类罐头测定值高,其中砷测定最高值2.00 mg/kg,铝29.6 mg/kg,金属罐包装的罐头锡含量较高,最高值为38.8 mg/kg。结论通过对北京市市售6大类罐头食品中14种元素的测定表明,罐头食品中有害元素均与其原料和包装材料有关,部分鱼类罐头中As,Al含量较高,金属罐装罐头中Sn的含量较高。结合罐装食品的食用频次和食用量分析,北京市市售罐装食品,尚无大的食用风险。但如果长期食用,考虑大多数元素的累积量还是存在一定的风险。[Objective]To determine and analyze the content of 14 elements(Fe,Mn,Cu,Zn,Pb,Cd,Ni,Cr,V,Mo,As,Hg,Al and Sn) in six categories of canned foods on market in Beijing in 2017,understand the safety status of canned foods in Beijing,and provide the basis for food safety regulation. [Methods] The multi-element analysis of 14 elements in six categories of canned foods on market in Beijing was conducted by using high-pressure tank nitric acid digestion and inductively coupled plasma mass spectrometry(ICP-MS). [Results] Totally 47 canned foods were tested,and the contents of six elements which have the limited standard were lower than the national standards. However,the contents of arsenic and aluminum in aquatic cans were higher than those of other cans,and the highest concentration of arsenic and aluminum was 2.00 mg/kg and 29.6 mg/kg respectively. The content of tin in metal cans was higher,the highest value was 38.8 mg/kg. [Conclusion] By the determination of 14 elements in six categories of canned foods on market in Beijing,the results indicate that the the harmful elements in canned foods are mostly related to their raw materials and packaging materials. The contents of As and Al in some canned fish are higher and the content of tin in metal cans is higher. Combined with the analysis on frequency and consumption of canned foods,there is no significant food risk for commercially available canned foods in Beijing. However,there is still some risk due to the accumulation of most elements when long-term consumption.
