摘  要:目的了解平顶山市食品污染状况,为开展针对性的控制措施提供科学依据。方法按照《平顶山市食品安全风险监测工作手册》要求进行样品采集和检测分析。结果 2012-2017年,共监测4 763份样品26 427项指标,样品和项目超标率分别为13.04%和2.47%;油条中含铝添加剂、熟肉制品亚硝酸盐、畜禽肉致病菌超标率较高;重金属是新鲜蔬菜和谷物超标的主要原因;不同来源样品超标率差异有统计学意义(P<0.001)。结论平顶山市监测食品安全状况不容乐观,建议有关部门加大监测和监督力度,保障人民群众健康饮食。Objective To understand food pollution situation of Pingdingshan,so as to provide the scientific basis for taking effective control measures. Methods Samples were collected,detected and analyzed according to the Food Safety Risk Monitoring Program of Pingdingshan. Results A total of 4 763 samples and 26 427 indicators were monitored from 2012 to 2017. The excess rates of samples and projects were 13. 04% and 2. 47%,respectively. The unqualified rates of aluminum-containing additives in fritters,nitrite in cooked meat and pathogenic bacteria in meat were high. Heavy metals were the main pollution causes of fresh vegetables and grains. The differences in the unqualified rates of samples from different sources were statistically significant( P〈0. 001). Conclusion Food pollution was serious in Pingdingshan,which indicated the strength of monitoring and supervision must be enhanced to secure people's diet safety.
