摘 要:建立气相离子迁移谱(gas chromatography-ion mobility spectrometry,GC-IMS)测定橄榄油等油类中可挥发组分的检测方法,样品在60℃条件孵化10 min通过顶空直接进GC-IMS进行分析,通过分析软件实验室分析浏览器(library analysis viewer,LAV)内置的主成分分析(principal component analysis,PCA)分析程序对数据进行处理。结果表明:建立的气相离子迁移谱检测方法可以对橄榄油等植物油中挥发组分进行检测分析;通过PCA主成分分析可以将特级初榨橄榄油与其他油类(果渣油和其他植物油)进行分离,并可以对果渣油、玉米胚芽油、葵花籽油、精炼棕榈油、花生油和大豆油的掺假进行判别分析,掺假鉴别率可以低至5%。A gas chromatography -ion mobility spectrometry GC -IMS method was established for thedetermination of volatile components in olive oil. The procedure involves direct introduction of the olive oilsamples into vial,headspace generation (incubation at 60 益 for 10 min),and automatic injection of thevolatiles intoa gas chromatography-ion mobility spectrometer. The data obtained after the analysis of olive oiland other vegetable oil were preprocessed and submitted to the built-in principal component analysis(PCA)program of the software library analysis viewer(LAV) . A headspace device coupled to multi-capillary column-ion mobility spectrometry had good performance in detecting volatiles in olive oils. The results from PCA showedextra virgin olive oil could be separated to other oils (pomace oil and other vegetable oils)and,adulteration ofextra olive oil with pomace oil or corn oil or sunflower oil or refined palm oil or peanut oil or soybean oil wasdistinguished using PCA statistical analysis. The model was able to classify 100 % adulteration samples,anddetected as low as 5 % of adulteration of extra olive oil with pomace oil,corn oil,sunflower oil,refined palmoil, peanut oil, soybean oil.
