摘　　要：多肽是从动植物及微生物中提取的分子量小的寡肽及分子量大的环形肽,科学试验表明活性多肽具有降低胆固醇、降血压、降血脂、抗氧化、抑菌等功能,概述了蛋白质多肽的生物活性及在食品中的应用,并对蛋白质多肽的发展进行了总结和展望。Polypeptides are oligopeptides with small molecular weight and circular peptides with high molecular weight extracted from animals, plants and microorganisms. Scientific experiments show that active peptides have the functions of lowering cholesterol, lowering blood pressure, lowering blood lipids, antioxidation, bacteriostatic and so on. In this paper, the biological activities of proteins and peptides and their applications in food processing were summarized, and the development of proteins and peptides was summarized and prospected.
