摘  要:本文以西兰花老茎为原料,采用α-高温淀粉酶和中性蛋白酶复合提取不溶性膳食纤维(IDF)。结果表明:复合酶法提取西兰花老茎不溶性膳食纤维最佳工艺为α-高温淀粉酶添加量7.5μL、酶解温度90℃、pH6、酶解时间60min,中性蛋白酶添加量20μL、酶解温度50℃、pH8、酶解时间60min。在此条件下,西兰花老茎IDF提取率为33.54%。复合酶法提取西兰花老茎不溶性膳食纤维的研究为西兰花老茎资源的综合利用提供了借鉴。The insoluble dietary fiber (IDF) was extracted by using α-high temperature amylase and neutralprotease, using the old stem of broccoli as raw material. The results showed that the addition of α-hightemperature amylase was 7.5μL, the enzymolysis temperature was 90℃, pH6, the time of enzymatic hydrolysiswas 60min; the amount of neutral protease was 20μL, the enzymolysis temperature was 50℃, pH8. Under thiscondition, the extraction rate of IDF was 33.54%. It could provide a theoretical basis for the comprehensiveutilization of broccoli resources.
